One of the rarest and most extraordinary coffees on earth, Cafe Bajareque is the Geisha varietal of Arabica Coffee, thought to be extinct but discovered in the high altitude fields of Volcan Baru. Cafe Bajareque means "coffee of the mist" which helps give it a very unique nose of jasmine and it has a floral finish. It is grown using traditional organic techniques in the shade of orange and banana trees. the coffee is picked by hand, only when ripe, and it is dried on a porch to allow the moisture to slowly evaporate and leave the delicate flavors in the coffee. This extraordinary coffee is sometimes described as the coffee that thinks it is a tea because of its unique floral finish. A remarkable dessert coffee, Cafe Bajareque pairs wonderfully with chocolate. Less than 15,000 pounds of this coffee is grown annually and most is purchased by Japanese brokers.

Once dry the coffee is roasted using state-of-the art computer controlled roasting equipment. This produces an extraordinary coffee with notes of jasmine and a floral finish that is utterly enchanting. This coffee normally retails for mare than $250/lb.
